Train smash

I'm not fond of cooked tomato even though it is the basis of so many dishes. I've grown to not hate it over the years and tolerate it and may even grudgingly admit that I like it...in small doses.

This is a favourite in our house but not mine, so I make it without eating it.

Tomato, cooked in a olive oil, a little seasoning including some sugar, and shredded basil leaves, served on fresh bread.

Here it is with a glossy finish about to be devoured.


The name is not particularly attractive and I note from doing some research that other countries also know it by the colourful name of Train Smash.
