Rainbow salad

I was given a diagnosis of pre-diabetes today. My average blood sugar is slightly higher than ideal.

The good news is that it is reversible, with lifestyle changes. I had been thinking seriously of cutting out most of the added sugar from my diet again. I did it a year ago for a while. I already aim to eat mainly plant based whole foods. Now I have the incentive to motivate me.

This rainbow salad with home made no-oil red pepper hummus was very tasty.
