Cheesy crumpets

Welsh rarebit on crumpets.  Apparently crumpets are enjoying some sort of resurgence, according to Waitrose's Food and Drink report 2019:
"Crumpet sales are up 27% and chefs such as Yotam Ottolenghi and Marcus Wareing are inspiring us with toppings like lobster, cockle butter, or Cheddar and Marmite."

On Saturday Kitchen yesterday, Tom Brown of Cornerstone was doing homemade crumpets with shrimps.

Crumpets Rarebit is just more evidence of this latest trend.  At Beara Beara, Islington.
