Cosmic Crisp

Cosmic Crisp is a brand new variety of apple that has been brought to market just this year. Development of the apple occurred right here in the Wenatchee Valley -- "The Apple Capital of the World" -- and began in 1997. I guess this is the apple that is supposed to save our industry. It is a cross between a Honey Crisp and Enterprise. Our growers have gone all out and replanted orchards with this variety. It has a long shelf life which makes it an attractive apple and it is also slow to brown.

 We did a taste test of it and tried to describe it like one does wine. Visually, I don't think it is as pretty as Honey Crisp. It has a firm texture and a nice mouth feel. 

Other than just biting in and eating it, I really like adding it to a salad.
