We had Pineapple Mac Cheese with orange infused steamed cabbage for dinner tonight. It is one of my go to comfort meals...well the mac cheese bit of it, anyways. People often diss this meal without trying it. If you like Hawaiian pizza, or cheese, ham and pineapple toasties, then this is a dish for you, my friend.

Pineapple Mac Cheese
Put a pack of dried macaroni into a pot of boiling water, and turn oven onto 180 deg C.

While this is cooking, put 25 grams of butter into a pot and gently melt over a low heat. Once melted, add half a cup of flour and mix through. Add a pint of chicken stock (or vege stock if it suits), some ground black pepper and the juice from a 432gr can of crushed pineapple (strain it off and keep the pineapple to one side).

By the time this has become a sauce, your macaroni should be cooked, so strain it, and put a third of it into an oven proof dish for cooking the mac in. Pour over a third of your sauce. Top with half a cup of grated cheese.

Repeat the third of mac, third of sauce and half a cup of grated cheese.

Finally the remainder of the mac, then sprinkle your crushed pineapple all over it, your final half a cup of cheese and top with the remainder of the sauce. Then top it all with a layer of bacon. Bake in your preheated oven for around 30 minutes.

I'm a bit bish bosh bash with my cooking, so there's probably more cheese in it, but that's where it started from.

The cabbage was steamed with chunks of orange in it. Hence orange infused.

This was a lovely Friday night meal for us, and we'll have leftovers for tomorrow. Yum!
