Moroccan chicken traybake - without the chicken

I was stuck in the house for hours yesterday waiting for a heating engineer. As my Experiment no 2 was due to visit with her girlfriend, from Manchester, I decided to try out a new vegan recipe.

E no 2 is vegan and her gf is vegetarian...

This is a variation on the effing chef Gordon Ramsey's Moroccan Chicken traybake recipe - actually really nice. Served with herby couscous + pomegranate seeds and a tomato, cucumber + mint salad.
