Italian Pagnotta Loaf

This week is getting very food focused; but with the remnants of Storm Ciara outside it is not surprising.  

Very successful first session on the Italian Bread Making Course, learning about pagnotta, a simple rustic loaf.  I have been making bread for a while but this highlighted that I still have a lot to learn.

The tutor made this loaf using dough that had been prepared using very little yeast (1-2 grams) but a long proving time; and then baked using a dutch oven technique.

It was delicious.  Have made my own dough which I will attempt to bake tomorrow using the same technique.
