Eat the weeds

This was the only picture I took today. 
If you have dandelions in your garden or yard the best advice is to leave them alone and let the bees take advantage of the early flowers.
But if you crave fresh greens you can cover a few plants with a plant pot or similar to exclude the light and after 2 or 3 weeks the leaves will look like this, pale shadows of their normal selves.  After a  rinse, and checking for slugs, they are ready to make into or add to a salad. By blanching them most of the bitterness  of the green leaves is removed. 
The traditional French recipe combines them with bacon and croutons but there are other  ways to use them too.
