Apologies to Vegetarians!

Tonight's supper was delicious! I doctored the recipe a wee bit - but it was a hit!

Chicken with lemon and Thyme ( the recipe was for fresh oregano which was not available)

Ingredients

8 chicken thighs and drumsticks with skin
500g new potatoes, sliced thinly with skin left on
1 sweet potato (as with new pots)
8 shallots
100g smoked bacon lardons
1 lemon in wedges
100 ml white wine
200ml chicken (vegetable) stock
2 tbsps of olive oil
4 sprigs fresh oregano /thyme/ lemon thyme (you choose)
A handful of cherry tomatoes (I added )

Salt and fresh ground pepper!


Method.


Toss sliced potatoes in 1 tbsp of olive oil and put in a hot oven preheated to 220 (fan 200) for 20 mins

When potatoes are starting to crisp add chicken, lardons, lemon, herbs, and return to oven for 20 mins. Season.

Once skin is starting to crisp add stock and wine and cherry toms & return to oven for further 20 mins or until chicken is golden and cooked all the way through.

Serve with steamed green beans or carrots and crusty bread. Delicious!
