Use it or lose it

Cauliflower sliced thinly, blanched, then baked in a high oven drizzled with oil is a fine thing.

Food that's past its best can be revived with a bit of imagination and time. I have a lot of time at the moment.

Today's extra pic and lunch is: Tomato carbonara

Ingredients
Leftover, slightly tired tomatoes
garlic (or garlic granules)
Salt and pepper
A sprinkling of sugar or honey
Portion of spaghetti
One egg yolk
Tablespoon on cream
100g strong cheese (ideally parmesan)

Method
Cut the tomatoes in half, sprinkle with garlic, seasoning and sugar/honey. Place in a 200 degree oven face up on a baking tray and bake until the edges are crispy.

Meanwhile beat together the yolk and cream. Grate the cheese.

Cook the dried pasta until al dente. Drain, reserving a splash of the cooking liquid. 

Put the pasta back in the hot pan (with the gas off). Add the egg, cream mixture and splash of cooking water, stirring continuously. The sauce should thicken slightly. Mix in the cheese, then add the baked tomato.
