Medlar wine from the 2019 crop

Already it tastes like a good Fino sherry. It really does seem to be a very reliable wine. It's a pale rose colour, though you can't see because I used red wine bottles; This is from the crop from the Medlar in Linda Vista Gardens. If I didn't do this, nobody else would do anything with them, I'm sure. I suppose there's not a lot else you can do. Make jelly, or boil them up and sieve them (there are a lot of seeds and hard bits), when they taste a bit like stewed apples. Those two and wine are about it. And you have to blet them first (leaving them to semi-rot - I put them in layers in the cellar for a month or so). All a bit of a hassle for people!
