Wild Garlic Pesto

There is an abundance of wild garlic at the moment, growing alongside our daily walk. And every year I know I ought to do something with it, an ingredient growing wild but with so much opportunity. Inspired by lockdown (and Instagram and Facebook and the fact that procrastination can take a hike), I set about foraging. Garlic leaves, parmesan, rapeseed oil, cashew nuts and lemon juice later... fantastic. If I say so myself! Even my usually very critical daughter (and accomplished chef) enjoyed it!
