Lunch

Today I am quite excited. This is my 4,500th posting on Blipfoto. During that time my pictures have had 1,377,710 views. Thank you to all my followers and people who drop in from time to time.

My other news is that I have been shortlisted for The Pink Lady Food Photographer of the Year Awards. The ceremony is tomorrow at 8pm and sadly, will only be a virtual one.

It will be live streamed on Facebook and YouTube.

Lunch today is the solution for those jars of anchovies you have at the back of your cupboard.

Battered Anchovies

Ingredients
1 jar of anchovies, drained of oil. The fish then dried out between two paper towels.
100g potato starch
one small egg
level teaspoon of bicarb
water
vegetable oil for frying
lemon

Method
Sprinkle 10g of potato starch into a bowl to dust the anchovies.
Meanwhile mix the rest in another bowl with the egg, bicarbonate of soda and enough water to give the consistence of double cream.

When the oil is hot enough dip the flour dusted fish in the batter them slip into the oil. The batter will puff immediately. Remove when golden brown.

Serve with lemon and a glass of Provencale Rose.
