Bazinjan Rahib ( Sweet & Sour Aubergine )

Lebanese cuisine is my favourite and so flexible .This above  has been eaten warm this evening and tomorrow the other half will be eaten cold with a side dish of hummus  & crushed nuts .. It has aubergine , garlic , onions tomatoes , fresh coriander ,lemon juice ,spices and sugar ,My mediterranean block was a must .Will make a link of the recipe tomorrow should anyone want .I know of one so far . Have Dog Will Travel

Bazinjan Rahib Sweet & Sour Aubergine Serves 6 but I find this makes for two days )
2 medium Aubergine ( trimmed and cubed ) salt .
4 garlic cloves , crushed .
2 large yellow onions chopped .
120ml / 4 fluid oz , olive oil.
5ml / 1tsp Paprika .
10ml / 2tsp ground Cumin .
15ml/1tbsp light brown sugar .
3 medium tomatoes , deseeded and chopped , juice of 1 lemon .
60ml/ 4tbsp finely chopped coriander . -------------
In a colander toss cubed aubergine with salt and leave to drain 30 min
Pat dry-- Line a large baking tray with foil .In a bowl mix aubergine , chopped onion.
garlic cloves ,olive oil. cumin, paprika and sugar.Toss together well until the aubergine is
coated with oil and spices .Spread on the tray and place in preheated oven 200°C for 40 mins stirring twice ..... Then add the tomatoes tossing among the other veg and oil .
Return to oven for 15-20 minutes until both are very soft .
Return all to a bowl , add lemon juice and coriander. Stir to mix thoroughly .Leave until temperature or chill slightly before serving .
