Barnsley Chops

These lovely looking Barnsley chops are from Critchlows one of Bakewell's great butchers.
i love lamb at this time of year so much more flavour than spring lamb.
apparently they've started lambing down south but it'll be a month before it happens in the Peak District.
A Barnsley Chop is a lamb chop taken from right across the loin which becomes a double sided chop. It is sometimes referred to as a saddle chop as it is cut across the saddle producing a double loin chop with a little under fillet all in one.
The Barnsley Chop is believed to have originated at Brooklands Hotel, in Barnsley, where it is still served, though some claim it was the Kings Head pub in Barnsley.
