Flappies!

Tried to make this a mono Monday shot. Bit rubbish but hey. We decided to do some weekly baking at the start of lockdown and cheer ourselves up by always having a supply of homemade cake to hand. It was an excellent plan. Sadly, like with any lockdown idea, literally everyone had the same plan and so baking ingredients became instantly unavailable and that was the end of that. We did yesterday manage to get some gluten free oats though, and so when I came back from my walk I found James had made flapjacks! His general motto with food is to just add as much as possible of the good stuff and so these have twice the usual amount of golden syrup. He also condenses it as hard into the tin as possible and then only bakes for a really short time, so it’s crispy on the top and gooey in the middle. Sickly but delicious. Goodbye teeth!
