Waste not, want not

Busy morning and afternoon in allotment.
Started hand weeding and thinning parsnips and beet. Finished the two rows of parsnips and started on two of the rows of beetroot.
Question?
What to do with the thinned beetroot seedlings? Well they could have been added to the compost bin, but that would be somewhat of a waste. They are a deliciously addition to a green salad but I had to use up some yellow label mushroom sausages. So they were lightly sautéed with crushed garlic and served as the main vegetable component of my evening meal and I have enough left over to make a green omelette for tomorrow mornings breakfast.
With another 3 rows to go it looks like they will be a main ingredient of the next weeks evening meals!!
