Lemon and coconut

Ben went out on a night ride with some friends. I took the opportunity to have an easy dinner then bake these while watching Africa on BBC.

They are delicious. Like lemon curd on top of coconut macaroon.

Not a whiff of refined sugar, gluten or wheat.
