wee meringue

Dad came round to share pizza night with us this evening.

Whilst P was doing his job of prepping the pizzas, I made a last-minute dessert with some rhubarb dad had left round earlier in the day.

I made meringues (using just 1 egg and 2oz of caster sugar - it gave me 4 nice sized meringues), and served them with whipped cream and cooled baked rhubarb. Was delish!

Pierre’s pizzas were a triumph again this week!
