Lobster & Rocket Salad with Creamy Chilli & Lime

1 lobster, picked
a handful of rocket

a good knob of butter
1 crushed garlic clove
a tsp of coriander seeds, crushed
1 red chilli, seeded and diced
a slug of white wine
a few chives, chopped
juice of 1 lime
cream
a half tsp of lemon dijon mustard
a tbs of mayonnaise 
freshly ground black pepper

melt the butter, sauté the garlic, coriander seeds and chilli
then add the white wine and cook it off
turn the heat off and add the rest

put the rocket on a plate
then the lobster
dribble the sauce over
& make it look pretty.
