Sous vide filet mignon with béarnaise, sweet corn, and Camargue rice. Wine: Stolpman Syrah 2018.
This was a spectacular dinner. The corn arrived from our CSA today and was spectacularly fresh. The beef is grass fed, grass finished beef (from ButcherBox—pretty much our only source for beef for about a year now). I find it nearly impossible to serve filet mignon without béarnaise. The wine is from an excellent vineyard for Syrah that we don’t find very often.
