Big bag of carrots (about 3lb)
A chunk of ginger (about 3inch)
Grate the ginger and chop the onions and saute them in the oil.
Chop Carrots and add them with the stock.
Add a splash of orange juice.
Bring soup to the boil.
Reduce heat and simmer until the carrots are soft.
Finely grate some nutmeg into the soup.
Season to taste and serve.
