Yesterday's rhubarb is today's crumble

In an effort to eat healthily, we don't have puddings during the week so when Friday comes along it is a special treat. I tried a variation of the crumble recipe where ground almonds are added to the mixture and half the sugar is demerera sugar. It made a more crunchy topping which we enjoyed...... and the rhubarb was lovely.
