Pancetta Pancakes

Sam and I cooked for his parents tonight - in keeping with Shrove Tuesday we made pancakes, filled with a creamy mushroom and pancetta sauce with cheese on top grilled till was crispy... Was good. Then lemon and sugar for dessert - all the fancy toppings never beat the classic for me!
