RECIPE

Hi All,
Here is the Cheesecake Recipe you asked for.
It's a basic recipe and I have attempted to make it easy for you.
If you have any problems, just ask:

DOYLEY’S CHEESECAKE
1 packet ‘Nice’ Biscuits (any easily crushed biscuits)
4oz Butter, melted
Add butter to crushed biscuits.  Spread biscuit mix into greased, greased paper covered base of a springform tin (25cm).  Place tin into the fridge while preparing mixture.

Dissolve (85g) packet of Pineapple or Lemon Jelly with 3/4Cup boiling water (I would use 2/3Cup of water as cheesecake was too wobbly).  Set aside until cools to room temp.

Beat 10oz., chilled, tin of Evaporated Milk, a splash of Vanilla Essence (optional) until light and fluffy.

Beat 1Cup Caster Sugar with 8oz. (250g) Philadelphia Cheese that’s been let to soften to room temperature, until like and fluffy.

Into the beaten Evaporated Milk, add the cooled jelly, mix to combine.  
Add beaten cheese and sugar mixture and mix until just combined.
Pour mixture into biscuit base and refrigerate for several hours.

Decorate with fruit.  Not sure anything else is required except a party!!  Enjoy  X x
