Roasted Goodness

I've recently found a new love for roasting vegetables. Tonight we had the Balsamic Roasted Brussel Sprouts, which I've made several times before, and I believe truly deserve the credit for my roasting inspiration. They were accompanied by a new experimental dish, Roasted Maple Glazed Carrots, and a basic couscous. They turned out lovely and oh, so yummy!
