Green Lentil Lasagna

Still feeling the benefits of our holiday to Chester; but it is nice to get back to a reasonably equipped kitchen.

We decided to have a good hearty vegetarian meal for Saturday night, as we had been eating out more than usual; and had a number of excellent meat and fish dishes.

The lasagna was made from a mince using onions, green lentils, tomatoes and yeast extract.  I slightly overdid the top, but this added a satisfying crunch.
