Crispy Halloumi with Zaalouk

For my birthday in the summer, Child No. 2 gave me a three month subscription to a food and drink bookclub.  As a consequence, over the last three months I have received three new recipe books; one Moroccan, one Italian and one French.

I have decided that now is the time to start expanding my repertoire; starting with an easy 'Tuesday night' meal from the Moroccan book of halloumi, zaalouk (roasted aubergine dip) and pittas.  (I didn't make the pittas!)

A good tasty meal; which slipped down surprising quickly.  I will be trying something more ambitious on Saturday.
