Pearled Spelt Risotto

The third result of the efforts to expand my repertoire of meals; based on the recipe books given to me for my birthday in the summer.  After two Moroccan-styled meals I went for an option from the French book; a risotto of pearled spelt, mushrooms and broccoli.

Not bad, but I would recommend using a young or a purple-spouting broccoli.  The regular head of Calabrese broccoli was too much for this dish.  Well, you learn as you go!
