Sushi for beginners?

Our nearest Hyper U has had a makeover, and put these ladies inside a Perspex box where they make sushi! I'm not sure who is going to buy it as most of the locals prefer to stick to their favourite food - pizza!
I notice now that one sushi-maker looks like she's about to cut her thumb off but she didn't!
