Pit-stop for lunch: open sandwich

Although I am happy to skip dinner on occassion, I absolutely hate skipping breakfast or lunch. I was so intent to finishing a piece of work today that it was just going to be a smoothie - except I had some nut cheese that needed to be used.

Sort of bored with it as it was, I re-invented it by mixing in some mushrooms and olives. It sort of resembles concrete, only better tasting. The virtue is, it was easily then stuffed into some de-cored cucumbers and peppers. Hurrah, meal done.
