Duck Confit

Duck leg confit, red Camargue rice, salad, and pomegranate and persimmon salad. Wine: Domaine Drouhin Pinot Noir Petites Secondes Willamette Valley 2017.

It’s been too long since I’ve had duck confit in the house. Fortunately, I have enough to keep me going for a while in the freezer. Usual addendum: I do not (as yet) make my own confit.
