Border Tails

First harvest!

This morning, I decided to turn off my outside tap and drain it for the winter. I have two half whisky barrels that I have planted this year with peas and parsnips. The peas are all finished now, but I decided to pick some parsnips today. I’m really pleased with the size of them.

After I picked them, I looked on line to discover I should have left them until we’d had a couple of hard frosts. Apparently, the cold temperature will cause some of the starch to convert to sugar and they will be much sweeter. I roasted these three with mustard and honey and they were very pleasant.
