Turkey Ministrations

Gearing up for tomorrow's Thanksgiving feast -- even though there will only be three of us around the groaning board tomorrow, thanks to the ever-present Covid scourge. 

Because there are so few of us, I thought a whole roasted turkey might be a bit much, so instead I've opted for a turkey roulade recipe, using just the breast.  It is pounded flat, and then covered with sauteed onions, fennel seeds, garlic, sage, and rosemary.  On top of that goes some grated butter, and then a layer of thinly sliced prosciutto.  The whole thing then gets rolled up, tied with string, and popped into the fridge for the night so all the flavours have a chance to mingle with each other before being roasted in the oven tomorrow.  Here you see the nimble hands of Mr. W initiating the rolling process as I got in his way with the camera!
