Roast Chicken

Roast chicken, gouda and cheddar mac and cheese, kabocha squash soup, and salad. Wine: Rusack Bien Nacido Vineyard Chardonnay 2017.

Though I have occasionally been known to roast an entire turkey for just the two of us on Thanksgiving, this year I went for a much smaller bird. The mac and cheese was made using the Modernist Cuisine method (no flour and only enough milk to dissolve some sodium citrate to keep the cheese from separating when it melts).
