Tri-Tip and Pinquitos

Grilled tri-tip, pinquito beans, guacamole, salsa fresca, and chips. Wine: Rusack Pinot Noir Santa Barbara County 2017.

Tonight’s dinner was inspired by Santa Maria barbecue. Santa Maria is a town in Santa Barbara County, and its barbecue tradition goes back to the 19th century. A traditional meal includes wood grilled tri-tip, pinquito beans, salsa fresca, a salad, and grilled bread. I used my gas grill, and had a couple omissions. The guacamole was added because I got two very ripe avocados from my CSA today. The chips were there for the guac and to help with the leftover salsa tomorrow. The salsa and chips were store bought.
