Mediterranean Chicken

Chicken breasts cooked en papillote with olives, preserved lemon, garlic, spring onion, and oregano buds; broccoli; and quinoa. Wine: Franck Millet Pouilly-Fumé 2019.

This was a delicious dinner. We really like Loire white wines, but we don’t have them nearly as often as we used to (though this is partially explained by the fact we don’t have white wines in general as much as we used to). In particular, I can’t remember the last time we had a Pouilly-Fumé, but we were overdue!
