Chocolate

In a replacement for a company Christmas party, we had some events tonight, all done via the ubiquitous Zoom.  We could select to do a magic show, quiz experience, painting class, cocktail mixing event, or chocolate tasting.

I obviously went for the Chocolate, and received a nice set of eight in the post, ranging from 100% dark (no sugar, quite bitter) through 85% all the way to Swiss style milk chocolate and white chocolate with pistachio.

I learned that white chocolate was invented to give to kids in hospital - they found milk too much like baby food and it was a good way of giving them calcium.  I also learned that milk chocolate was invented to make money - the cocoa pods were expensive and so the Swiss mixed it with milk (plentiful) and sugar (cheap) to make something cheap.  Chocolate is fermented fruit.  And the less said about the ingredient added to American chocolate so that it didn't melt in Florida the better...
