Boxty...sorta

Whipped up some potato pancakes with mash from our pierogy-making last night. Sorta followed a recipe for boxty, but was lazy and left out the raw potatoes. So it’s not really boxty, is it! Added some wild ramps that were picked and frozen last year. Whole thing turned out crispy and delicious, if not very photogenic.

Was supposed to rain or snow all day, but the sun made an appearance for most of the afternoon. Didn’t get out though, as chores and cooking were calling my name.

Dinner was venison bourguignon. Yum!
