Love, love stuffed portobello mushrooms, you can do so much with it.
You can stuff with anything you pretty much like.
I did mine in thin layers, so from bottom Rose Harrisa paste, mixed mascarpone (half a tub from yesterday dessert) with stinky blue cheese and chopped parsley & coriander, then for my husband layer of crispy chorizo and myself pan fried mushrooms.
On top also goes: pan fired spinach with ground pepper & nutmeg, pieces of artichokes, half a fig, capers and black garlic clove.
I'm going to bake it and serve with two sauces: tzatziki and guacamole.
For both I'm using roasted garlic I'm baking with mushrooms.
Kids will be pleased with chicken fajitas :)
