With my new and very successful method of levain feeding, I had about 200 grams of inactive starter in a jar in the fridge. So I turned to the "excess levain" chapter in my new book and made some crackers. A dead easy way to use up lots of starter. Just add a little olive oil, some seeds, salt and pepper, spread on a baking tray, and add more seasoning to taste (flaked ñora peppers here).

S seemed sceptical of the result earlier, but on trying them with cheese for our apero his verdict was "Very moreish". I'll cook them a bit less next time (the edges were a bit too brown) and try sprinkling parmesan on them as well as or instead of the peppers. The recipe is definitely a keeper.
