Pork Tenderloin

Pork tenderloin, quinoa, and salad. Wine: Rusack Bien Nacido Vineyard Chardonnay 2018.

The rub on the pork tonight had a very citrusy character: black timut peppercorns, black lime, lemongrass, thyme, and chipotle flakes.
