Roscoff Salad

I have rediscovered some old cookbooks by the Roux Brothers. This is from 'French Country Cooking' published in 1989. At that time in London we were on the cusp of Nouvelle Cuisine so I remember at the time this book seemed dated.

30 years on I realise classics never date!

As I am cooking a French themed lunch for friends tomorrow and was looking for a light starter I thought I'd road test this recipe.

Apart from the large prawn the ingredients are easy to find and quite modest. As with any recipe by Michelin Chefs, it is the prep that makes all the difference.

I can report that it tastes amazing!
