Beetroot

I do like autumn so I can start cooking lots of roasts and stews. It’s been a long time since I’ve cooked beetroot, but at least I remembered it took a couple of hours and put it in to roast at the same time as the chicken. In the recipe it’s glazed in balsamic vinegar and honey, not sure pumpkin seeds added anything, but it does make a nice autumn coloured blip.
