Black Country Faggots....

Home cooked by myself to my Mums recipe, so how to do them I hear you ask.

First get Some Liver say about 12 ounce,
heart, about 6 ounce,
Caul, (which is the membrane that covers the cows intestines).
Two small onions and half a packet of stuffing.

Mince or chop up the heart and Liver, (I use scissors to finely cut them up but that is how my Mum used to do it).

Finely chop the onions and boil until soft, drain and mix the chopped liver and Heart until it's all combined.
Then mix the stuffing into the mixture.
Cut the Caul into squares and put the a spoonful of the Faggot mix onto the caul and wrap the caul around the mix and place into a meat tray.
when all the faggots are made then pour a mixture of Gravy over the faggots and cover with foil, place in an oven for 45 minutes, uncover the tray and bake for another 15 minutes and there you have Black Country Faggots.
For even tastier Faggots you can add some pork Belly, about 6 ounce.

We are taking these beauties with us in the caravan tomorrow for Dinner, we are heading for Evesham for the Easter Break.
