Burger

Grilled Wagyu burger with Bleu d'Auvergne, sunflower shoots, and shallot spread (caramelized shallots, purple mustard, tomato paste, and red wine vinegar) on a homemade bun; kale chips; and beets pickled with cloves, cardamom, and Timut peppercorns. Wine: Casa Silva S38 Los Lingues Cabernet Sauvignon 2017.

That was a fantastic burger and sides. The wine is from Chile, and it is rather jammy and sweeter than I usual prefer, but it paired nicely with the burger and blue cheese.
