Beans

The beans were an old Craig Claiborne recipe. They were interesting and enjoyable, though not something I'll feel compelled to make again. Clove came through as the primary flavor, which was unusual with beans and cream. The pesto was a tasty improvisation (radish shoots, an obscene quantity of garlic if there is such a thing, an anchovy, Cobanero chili flakes, herbes de Provence, and olive oil). It was wonderfully pungent and aggressive. We have several bottles of this wine we intend to age, so tonight we had it to get a baseline sense of it. It is still quite bright, acidic, and has a nice, not overdone level of malolactic fermentation.
