Pork Roast

Pork loin roast roulade with pancetta, garlic, rosemary, and lemon zest with caramelized lemon vinaigrette, sautéed kale, and crescent rolls (from readymade dough). Wine: Orma Toscana 2008.

The roast was very good, and the wine was excellent. The roast recipe was from America's Test Kitchen. The wine is a Bordeaux blend from Tuscany (not a Super Tuscan, as it is only Merlot, Cabernet Sauvignon, and Cabernet Franc), and it had a wonderful dominant note of oil-cured black olives
