Blackcurrant vinegar

Thought I would give fruit vinegar making a try. 1pint of vinegar to 1 pound of fruit, leave for 3-5 days then strain. Put vinegar in a pan with 8 - 16 ounces of sugar depending on taste, melt sugar then boil for 10 mins before decanting in sterilised bottles. What could go wrong?
