A rainy, rainy day, so a dinner blip tonight -- pork chops con el sabor de México. (Apologies to vegetarians and other non-pork eaters!)

Pork Chops with Spicy Roasted Pepper Sauce


Ingredients:
4 (4-ounce) boneless center-cut loin pork chops (about 1/2 inch thick)
Montreal steak seasoning (found in spice aisle at the grocery)
olive oil
1 cup bottled roasted red bell peppers, drained
2 tablespoons water
1/2 teaspoon ground cumin
1 chipotle chile, canned in adobo sauce

Steps:
1. Season pork with Montreal steak seasoning. Heat large non-stick pan, drizzle olive oil in pan, and add pork to pan. Cook 4 minutes; turn over and cook another 3 minutes. Remove pork from pan; cover and keep warm.

2. Place bell peppers and next three ingredients in blender; process until smooth.

3. Add bell pepper mixture to pan. Return pan to medium heat; cook 2 minutes, stirring frequently. Spoon sauce onto serving plates. Top each with a chop. Serves four.

(I served with green beans sauteed in olive oil and minced garlic.)
